This yummy dinner salad recipe combines chicken, bacon, avocado, onion, and cilantro for a deliciously healthy meal!
I am a huge fan of all-in-one-meals.
This is one of our family’s favorite meals, and I love that it is a dinner salad! It has loads of protein, healthy fats, and all whole foods. How much healthier can it get? Plus, I don’t have to think of any kind of side dish to go with it. It’s a whole meal in one scoop.
If I can put all the ingredients into one great tasting dish, my kids can’t refuse to eat the healthy parts. Luckily, everything in this recipe is healthy (yes, even the bacon) and my kids ask for this salad every week! It passes the kid test and the husband test.
You may recognize my Satisfying Salad Dressing from my book, Your High Energy Life: Banish Energy-Sucking Foods and Supercharge Your Days. It is pretty much the only dressing I keep in the house, and it goes with just about everything. It is also super easy to make and the healthy fats make any salad more satisfying!
This dinner salad is incredibly satisfying! Chicken, bacon, onion, cilantro, avocado - a delicious combination of flavors that really hits the spot. This is one of my six year old's favorite dinners, and that says a lot!
- 4 chicken breasts boneless skinless
- 4 cups lettuce
- 1/4 cup white onion diced
- 1/4 cup cilantro chopped
- 4 oz bacon cooked and crumbled
- 4 avocado large, cubed
- 1/2 cup Satisfying Salad Dressing or balsamic vinegar dressing of choice

Cook chicken breasts according to package instructions.

While chicken is cooking, prepare fresh ingredients. Dice the onion; cook and crumble the bacon; spin your lettuce; chop your cilantro.

If you don't already have your dressing made ( you should always have some Satisfying Salad Dressing on hand) now is the time.

When the chicken is done, slice into 1-inch cubes.

Place your lettuce in a bowl and top with chicken, bacon, onion, and cilantro. When you are ready to serve, cube and add your avocado, then toss with dressing.
The chicken does not have to be hot to serve this salad! Often I will prepare all the ingredients a day or two before, then when my avocados are ripe, I will add everything to a bowl, cube the avocados and add the dressing. It is the ultimate quick meal for those tight evenings!
